Feeding a family of 6 feels like a full time job at times and I admit to every easy trick like meal services, costco frozen food, and good ol mac and cheese to get the job done especially during production season. Sometimes the simplicity of a task like cooking a meal I know by heart brings me joy and comfort and sharing it with a table full of people is the cherry on top.
Mama’s Chicken Soup
2 boxes Imagine Brand Chicken Bone Broth
2 cups Celery
2 cups Carrots
2 rotisserie chickens (Sprouts has my favorite)
1 yellow onion
Fresh Thyme
Salt
Butter or ghee 2 tablespoons
1) Chop Celery, Onions, Carrots . Saute the onion with a dash of salt in the butter. Add the celery and the carrots in a large pot.
2) Add the broth to the vegetables then take the chicken breast of the bone and add. Leave the things and wings on the bone and add to the pot and let simmer.
3) Seperate the chicken from the pot and remove the bones and put the chicken back in. Add salt and time to tase. Cook on low until ready to eat.
4) Optional- add egg noodles or Matzah Balls
This recipe is so easy and a go to for me when anyone is sick. Letting the chicken simmer in the broth allows for more flavor and nutrients.
